Anyone who celebrates Thanksgiving is always looking to make a Turkey Soup after to not let all the leftover meat go to waste. I am certain we are all similar, carcass back in the stock pot, simmer 24 hours, sort it out later.
My family Turkey Soup is the same every year and while we all certainly enjoy it, I though it would be nice to change things up this year!! I found a recipe that looked great and modified it a bit to keep it clean. Along the way there were a couple mishaps that returned a different outcome, but the soup was delicious all the same!!!
I followed the recipe almost perfectly with the following modifications:
I used Ghee instead of Butter
Gluten Free Flour
Oat Milk instead of cream
I used my own Turkey Stock rather than the suggested bone broth
And lastly, I couldn't find my wild rice mix!! Someone put it away where I couldn't find it (I am sure that never happens to you!!) and so I used 1/2 cup each of white, brown and forbidden rice that I had on hand. The forbidden rice turned my soup a bit PURPLE! All a bit strange aesthetically, but a hearty dinner none the less served with a sourdough seed loaf.
Try it! I hope you LOVE it! This recipe served my family of four plus half leftover for lunch the next day :)
