Sausage & butter bean casserole with cauli rice

If you follow my recipe posts, you know that I like easy and delicious recipes and this one is just that. Another great thing about this casserole is how versatile it is. You can make this vegan if you want, just choose vegan sausage. You can also select the spice level and flavor of your sausage. If you do not like butter beans (you are definitely not from the south in the US), you can use other kinds of beans such as cannellini beans.


This is a new favorite for me, I highly suggest trying this one out. Make it your own so you will really love it!


Ingredients

400g / 14 ounce package of sausage of choice – vegan, vegetarian, spicy chicken

1 tbsp olive oil 1 red onion, thinly sliced 3 cloves garlic, thinly sliced 1 tsp sweet smoked paprika 1 tsp ground coriander 1 can tomato sauce

1 can butter beans 1 tbsp sambal oelek or spicy Asian sauce 1 cup packed spinach 1 large cauliflower, coarsely grated 4 tbsp low-fat yogurt, to serve


Instructions

1. Slice the sausages, heat the oil in a medium saucepan over a medium heat and cook according to the pack instructions. Add the onion and cook for 6-8 minutes until translucent.


2. Add the garlic, paprika and coriander. Heat for 30 seconds, then add tomato sauce, butter beans (including the water) and sambal oelek. Cook for 8-10 minutes over a medium-high heat, until thickened. Remove from the heat and add spinach to wilt.


3. While the sauce is cooking, grate the cauliflower either using a food processor or my hand with a grater. Once all is grated, put in a large bowl then microwave for 4-5 minutes on high setting, stirring once, until piping hot.


4. Serve in bowls, pour the casserole over the hot cauliflower, finish with a spoonful of yogurt.
