An unbelievably delicious and easy smoothie! This recipe description starts about cauliflower, saying it sounds gross. I am not one of those people that dislikes cauliflower, now I do not love cauliflower, but I grew up eating it, mostly with cheese on it nevertheless I have eaten cauliflower pretty much my entire life. And yes, I am on the cauliflower bandwagon for replacing mashed potatoes and rice. So, adding cauliflower to a smoothie is not big deal to me.
When I was making the video for this smoothie, a friend of mine from California called me, asked what I was up to, so I told her about this smoothie. Her response was typical, cauliflower, that doesn’t sound good. I told her that by adding to a smoothie, you get all the benefits of cauliflower without the taste or texture you may not like – and it is a great filler. So keep an open mind and give cauliflower and this smoothie a try!
½ cup frozen mango
½ cup frozen cauliflower
½ cup coconut water
2 tbl unsweetened coconut milk
Juice of ½ lime
Combine all ingredients in a high-speed blender and blend until creamy and smooth, enjoy!
