If you were raised in the south like me, stuffed bell peppers were a staple and eaten often. As an adult, I gave up eating beef (due to dietary reasons) so I looked for an alternative for recipes calling for beef. I replace ground beef with beef-less ground, which is made of mushrooms, soy or beans. Majority of the time, you can purchase this in the freezer or vegan section of your grocery. You can also use ground turkey or chicken. All still delicious, I don't miss eating beef with these alternatives.
