Vegan Mushroom Bourguignon

This mushroom bourguignon is the ultimate hearty, comforting vegan stew, not only is it vegan, delicious and easy to make, it's also surprisingly low calorie!

On Wednesdays, we eat Vegan! We continue our last comfort food from February today, next week we will have March Indian Vegan!

So it is still pretty cold in Sweden which of course leads to wanting to eat comfort type food, however healthy comfort food. I found this recipe and was immediately interested in making as it has mushrooms, one of my favorites as well as hearty which my boyfriend likes, something to warm you up on a cold Swedish evening.

This recipe is quite easy to make, lot of vegetables with complimentary spices. Another thing I love about this recipe is how versatile it is. You can add or remove vegetables to your liking as well as add vegetarian sausages (just don’t tell the kids they are vegetarian).

We made cauliflower mash which has become one of my favorites. A trick I have learned the hard way is don’t always follow the recipes as stated. Cauliflower holds more water than potatoes so do not add all the liquid the recipes states, hold off and see if it needs that much as I have made soupy cauliflower mash.

This recipe is so delicious and easy to make. Everyone will love it!
