Wednesday - We Eat Vegan!!

This week we are still in February, Comfort Food and nice hearty, wonderful, filling warm recipes.

We tried a Vegan Mushroom and wild rice soup this week which was easy and FABULOUS!

The original recipe called for over an hour on the stovetop however, I decided to try it in the instant pot. All I modified was the time based on rice cooking time, 12 minutes under pressure and the soup turned out perfect.

We baked a loaf of homemade sourdough from the same starter we've been fostering as well which turned out perfect!!
