We are absolutely LOVING this month! Learning about Indian cooking and trying all the amazing different flavors and varieties.
This week for Wednesday "We Eat Vegan" we made the Chana Masala with Spicy Pineapple salad and fresh coconut. It was such a treat!!
Now, before we go too much further, after our meeting with Upasana and Lokesh and understanding how healthy ghee can be while really changing the flavor profile, we have opted to use ghee all month in our dishes. Even the Vegan ones!
I appreciate that this may be highly controversial for many, and you are welcome to use oil instead however, I really now feel strongly that the ghee is worth it.
The primary summary is: Ghee is a type of clarified butter that is stable at room temperature. It has been used in Indian cooking and Ayurvedic medicine since ancient times.
Ghee is completely free of the milk sugar lactose and the milk protein casein and has been shown to promote gut health and reduce inflammation.
This Chana Masala (and we are having several of them this month) is sooo nice. The coconut adda a velvety creamy texture while the pineapple salad on the side is a nice counter balance.

The only thing I feel like I haven't nailed so far is the bread. Upasana agreed to connect with us later this month on a bread series and I am looking very forward to this!!
