Wednesday We Eat Vegan

We are still loving Vietnamese and this week we did a vegan pho for Wednesday. The broth is soooo easy and so amazing, roast the spices add the broth and viola! you have a delicious pho to add veg to. If you wanted to do anything extra or different, tofu, even animal based products (we won't judge) it will be lovely!!

We used this Pinterest recipe and created our own delicious pho with snap peas, savoy cabbage, mushrooms and carrot. Topped off with a bit of mint and sliced chilies, it was just beautiful!
