Today is Wellness Wednesday and we are preparing Venezuelan lentil soup!

The Venezuelan touch for this recipe is the “sofrito”. A sofrito is a mix of onion, garlic, and bell pepper cooked with some oil and salt. If you are following a vegan or vegetarian diet, lentils can be your best friends, they are rich in protein, fiber, iron and folate.

We have modified this recipe to support our clean lifestyle, omit the bacon and use vegetable broth.
