What’s For Dinner, Week of 11 April 2021

OOOOOOH…. So we are a week into the clean plate and I am absolutely LOVING IT!!

The recipes are easy, and really flavorful. This past week was a “Fat Flush” and while I know we are focusing on all sorts of “Superfoods” to encourage metabolic reset I am not feeling it at all.

Steph is making and enjoying the smoothie making this month, and we have some exciting new recipes in that department as well, hop over to Juice Box to check them out!!

I enjoyed everything this week so much however, my absolute favorite, will go back to soon recipes were the chicken sheet pan curry, the Mediterranean salmon and the chicken thighs with black rice. Pro tip on the sheet pan curry – we didn’t feel like it was as flavorful as we wanted so we doubled the spice recipe, this was a vast improvement in our mind.

Additionally, since these are generally 2 servings each, they are great for us single gals or if there are just two of us in the house. Just think about that if you are cooking for a family as you’ll want to double or triple the recipe.

We hope you love them as much as we do!!!

This week is heavy metal detox so still avoid refined sugar, grains with mycotoxin residue (barley, wheat, corn and rice – although rice is very low), high mercury fish, shellfish, non-organic fruit/veg, non-organic meat, processed foods, toxic oils (stick to saturated fats, olive oil, lard or butter – ghee is great!!) Unfiltered tap water.

The recipes this week are:

  1. Chickpea and Escarole Soup

  2. Zoodle Chow Mein

  3. Tex Mex Bowl

  4. KimChi Chicken lettuce cups

  5. Broccoli Parsnip Soup (Wednesday We Eat Vegan)

  6. Chicken and Zucchini Kefta

  7. Curry Chicken Lettuce Cups
