What's For Dinner week of 13 December 2020

Happy Friday Everyone!! We hope you had a wonderful week. The Holiday Spirit is certainly lifting us all up here at DW and with the start of Chanukah yesterday it's all candles and brisket with so many friends around the World! I love seeing all your FB posts so keep 'em coming!!


The marinated portobellos from last week were simply wonderful and I had them not only for dinner on Sunday, but lunch the two days following. Another MAJOR HIGHLIGHT of the week for me was the roasted beet and carrot salad and the enchiladas. We did a little video for you with the enchiladas and will be sure to get that out this week. I used vegan queso with that and they were some of my "best ever" enchiladas. I also have enough queso leftover to do a nacho night this week. I paired the beet and carrot salad with grilled chicken for a bit of protein. The dressing for that salad was so, so good. A bit too big of a recipe for the salad, so I have half leftover to use on something else :)


This week I am keeping it pretty simple. It's busy running up to Christmas, we have our Crystal Bowls event on Tuesday and Friday I am off to Highclere castle (Downton Abbey filming location) with Kate and Audrey for a Xmas tour and afternoon tea. So we're going to do:

  1. Vegan pulled smoky jackfruit with red cabbage slaw and crispy kale

  2. Lebanese Roast Salmon and Cauliflower salad

  3. Gwyneth Paltrow's Za'atar Chicken bowl (one of my faves and so easy)

  4. Vegan Cauliflower and Red Lentil Curry

  5. Fully Loaded Vegan nachos (this is where I use my leftover queso!!)

  6. Lemony Lentil Soup

  7. Tahini Caesar Salad with grilled chicken
