It is almost the middle of June!!! I just cannot believe where the year has gone. We’ve had a lot of change at Beaufort house. Matthew left to join the US Army as a special forces candidate, and it has left a BIG EMPTY SPACE in the house. I don’t have words to explain it, and while I thought maybe I was excited for this newfound freedom, I am finding it so hard to not have him around.
This new world has also changed what dinner is like around the house. Smaller portions need to be prepared, that’s for sure. And… I am not nearly as worried about how much fish and poultry I am cooking anymore.
Last week was a wonderful menu and I absolutely reveled in the Gazpacho!!! Which I have to say was my very favorite. I am really looking forward to this week as well, with an old family favorite (halloumi, sweet potato burgers) on the menu.
I’m pairing Wednesday, we eat vegan this week with a fab, non-alcoholic cucumber, basil sparkling lemonade and am looking really forward to that! I’ve popped it into the Pinterest what’s for dinner page for you. Hope you love it!!
