Happy Friday Everyone!! We hope you had a wonderful week. We are still super-spirited here at Destination Wellness and preparing for the Holidays. Our first yoga event happened this past Tuesday and it was so lovely! I hadn’t slept this good in ages and got so much out of the class. My MUM IS COMING SATURDAY for 2 weeks and I am so thankful that she’s been willing to do the Trek from Mexico, drove up to Arizona, (a BIG thank you to my lifelong friend in Scottsdale who is watching her dog) and enduring a 10 hour flight to London. This is my own Christmas miracle in a very difficult year, and I am looking so forward to enjoying this time with her, my beautiful kids (only 2 at home for Christmas) and our extended Venezuelan family that lives with us. It will be just lovely.
I have to say, as strange as it may seem, my favorite this past week was truly the fully loaded vegan nachos. After that meal I still had about a cup or so of vegan queso and I used it yesterday to whip up a vegan cheddar and broccoli soup for the house for lunch. It was absolutely fabulous and I will post on that individually, later. I highly recommend it.
This week I have a few tried and true family favorites. It's still busy here with Christmas preparations, I am off to Highclere castle (Downton Abbey filming location) with Kate and Audrey today for a Xmas tour and afternoon tea.
Our meals this week will be:
Roasted Red Pepper and Chicken coconut curry (I’ve made this for my family for almost a decade and it is a big favorite!)
Pad Thai Salad (all veg) I suggest pairing this with a grilled protein of your choice.
Meyer Lemon Risotto with Basil (This is a Madison favorite and a bit of a splurge this week, but it will make me feel a bit closer to the one kid I don’t have home this Christmas)
Chicken Jalfrezi (quick, easy and sooooo WORTH IT!)
Teriyaki Salmon with baby bok choy (pak choi)
Baked Sweet Potato Rosti with BB Salsa and poached egg
Spicy Meatball Banh Mi (I am really excited for this one!)
