What’s for dinner, Week of 30 July 2021

We love Clean Summer Fun so much that we are continuing it into August! Summer does continue, at least until school starts so let’s keep up the lighter, healthy, fun recipes.

Last week I made the Vegan Tomato Risotto that was so delicious I almost made it the day after I finished the leftovers. My boyfriend and I loved this recipe, I have shared it with many folks, and will be making this one part of my rotation. I love to try new recipes all the time, some make it into my rotation while others that I do like lots just get pushed down the list – this one is in the upper part of my list.

In keeping with our Clean Summer Fun theme, keeping it fun, easy and delicious. I have included another sandwich that is made with jackfruit, one of my new favorites. I have also included a beet soup which I know may not be a recipe some will make, I did not realize until a few years ago how many folks do not like beets, my mom included in this. Try it if you are on the fence of beets, definitely try it if you like or love beets.
