Venezuelan week was so amazing!! I think Arepas are my personal favorite however, I was so impressed with the Lentil stew. I hope you all enjoyed the recipes as much as we did.
This week is bringing the close of January and Sunday this week for Serenity Series we have our Myhre Syndrome Charity event. We are still two days away from the event but thanks to all of you, we’ve almost doubled our fundraising goal!! More than $4,000 has been contributed so far and we are all so thankful for everyone who has contributed.
Whether you’ve donated or not, the beautiful Healing Chakras Meditation is available to everyone. A lovely journey in mindfulness where I am certain the entire attendance list will just fall in love and peace. Space is unlimited so book in here at no charge to receive the zoom link and join us Sunday! https://www.destinationwellness.uk/bookings-checkout/healing-chakras-meditation?referral=service_list_widget
Meanwhile, we are preparing for February, a new month, and with every new month at DW, a new theme on food inspiring what’s for dinner each week.
For February we are focused on comfort food. For many of us, February is the coldest month of the year and we need comfy, cozy, warm food to keep us feeling satiated. Our recipes this month however will not only focus on comfort food but also ensuring that the recipes are clean and super-nourishing for our bodies. I am trying to keep the prep a bit simple as well as it’s a very busy month.
We splurged quite a bit in January trying new cuisines and with Matthews special week, so this next week is almost 100% vegetarian (just the turkey mince in the pie) and even will be vegan more than 50% of the week.
Our meals this week will be:
Green Goddess Zucchini Pasta with grilled Halloumi
Vegan Mac and Cheese with broccoli (kid and family favorite without the guilt!)
Vegan Thai Green Curry
BBQ Lentil meatballs (Vegan and Soy-Free)
Vegan Chili
Cauliflower Parmesan
Sweet Potato Shepherd’s Pie
