Phew!! We are past the week after Thanksgiving and planning for Christmas I am certain on every front. This week we're planning a pretty easy week. You'll find Vietnamese bowls with a vegan meatball option and vegan lentil chili which can both be done in the instant pot/crock pot to let hang around for a day or so. In my house I leave it on the counter and let people help themselves to lunch or dinner when ready. We're all so busy this time of year it's nearly impossible to sit down to a family meal every night!!
For Sunday dinner this week, which we will all sit down for, we're planning grilled, marinate Portobello's with a horseradish cream, cauliflower mash and a white cabbage winter salad. I'm even opening a nice bottle of red to enjoy with that!

Enchilada sauce (canned is okay if you want to be easy or make your own with the recipe on the WFD board!!)

White cabbage Edamame Arugula/Rocket
Sour cream (option to use vegan)
Ground Chicken or Turkey (Omit if using vegan meatball option)
