Happy Friday Everyone!!!! Sunday the 7th is my BIRTHDAY - WHOOP!!
It has been a wonderful week! The weather (aside from Wednesday afternoon/evening) has been great, and we are just loving this Indian month! (def gets my vote over Ethiopian) LOL.
We would love to hear what your favorite meals were last week. I am voting for either the Prawn butternut curry (although I’d like more spice next time) or the butter chicken (but also not spicy)…. All the meals were delicious and some will def be BACK ON THE MENU…
I will probably keep rambling on about this but… My Indian bread game is WEAK! And I need to know this. Upasana and Lokesh agreed to a course 😊 so I am all about that later this month.
Our meals this week will be:
Baingan Bharta – fire roasted eggplant curry
30 minute coconut butter cauliflower
Aloo Gobi – Indian spiced cauliflower curry
Madras Lentils
Chana Masala with Fresh Coconut and Pineapple Salad (Wednesday We Eat Vegan)
Dahi Baingan
Butter Halloumi Curry

And well, the naan bread….. I learned that this is not really what the eat on a day to day basis so we are working on options. Chapati and Roti are the way to go and I’ve included a link to recipes on the pinterest page this week.
