We all LOVED the Korean food this past week and still have loads of Kim Chi leftover. Now that we're in tier 5 lockdown, schools are closed and we really can't go anywhere in the UK, there will probably be a lot of Korean lunches till the Kim Chi is gone. I think my favorite was the Kim Chi Fried Rice! So easy and really substantial and delicious.
We are still celebrating New Beginnings here and this week brings us Ethiopian Cuisine. We have been prepping a sourdough starter base for the Ethiopian breads this past week and I will share more on that later. We're 5 days in as of now, feeding it daily and getting a nice bubbly starter everyday, I am excited to start working with it this weekend.
Make ahead your Berbere Spice mix as it's a fundamental staple!! Recipe for that can be found here: https://twosleevers.com/ethiopian-berbere-mix/
Many of these are already clean, vegetarian and vegan however, there are animal byproduct options as well.
Our meals this week will be:
Misir Wot (served with Injera)
Tikil Gomen - vegan and also served with Injera
Shiro Wot - I am planning to make the honey bread to go along with this
Berbere Chicken with Lentils
Yekik Alicha
Doro Wot (Using my instant Pot for this!!)
A random Selection of vegetable sides that can be served hot and cold
